Reverse the war on bacteria!

In the west there is an ongoing the war on bacteria, with the narrative being our lives would be much better if we could kill them all, there is a huge fear around fermentation. People want to know if they have the right bacteria growing in their jars, people do not want themselves or others to get sick around the food they produce. We are rediscovering the ways of the old country and the art of working with microbes, harnessing the power of microbial transformation and rather than having it as something that decomposes our food into something we reject as rotten, we are using it to make our food more delicious and digestible and more stable for storage.
